Avocado with Warm Bacon Cilantro Dressing

IMAG0336I made this delicious recipe for lunch today based on a recipe by Living Eventfully that I of course found through Pinterest. I followed it pretty closely with a few distinct differences. One of which being that I didn’t feel like measuring anything! ;D
(Btw, I know the photo doesn’t look appetizing, but trust me, it’s incredible.)

Here’s her recipe and below are the changes I made:

1/3 pound sliced bacon (about 4 slices)
2 firm-ripe avocados, each pitted, peeled, and cut into 4 to 6 wedges
3 garlic cloves, minced
1/4 cup water
2 tablespoons fresh lime juice
1 1/2 teaspoons sugar
Kosher salt
Freshly ground black pepper
2 tablespoons chopped cilantro

Cook bacon in a skillet over medium-low heat until crisp.
Drain bacon on paper towels. Remove pan from heat and pour the bacon fat into a bowl. Add 2 tbsp. bacon fat back into your skillet. 
Divide the sliced avocado wedges among 4 plates.
Heat bacon fat over medium heat. Add garlic, 1/4 cup water, lime juice, and sugar and simmer for 1 minute, stirring.
Season with salt and pepper. Stir in cilantro.
Crumble the bacon in to the skillet.
Stir until combined.
Spoon over avocado wedges and serve immediately.
Lick your plate.

Here are my changes:

First, like I said, I didn’t bother measuring anything. I just threw in whatever amount I felt like!
Second, I used bacon we had already cooked the day before and then refrigerated. I then used the skillet to warm up the bacon, therefore rendering out enough fat to cook the rest of the dressing. Side note, we used the Cold-Oven Method to cook the bacon, and it was great! You should definitely try it!
Third, instead of garlic cloves, I’ve been using the refrigerated minced garlic in a squeeze bottle lately. Much easier especially if you don’t keep fresh on hand all the time like us.
Fourth, I added in some Garlicky Greens we had left over from Wegman’s for  a party. We got it from the catering department but that link will show you a recipe on how to make them yourself. They’re a bit salty and very garlicky so they were a great addition!

Finally, I added about a tablespoon of dijion mustard. Mmmmm a good decision!

My only other thoughts on this recipe are don’t both sharing! I ate the whole myself and LOVED IT. I will definitely be making this again, and if I do want to share, I’ll increase the recipe by a LOT. 😀

Self-Watering Container for Scallions

Contrary to Pinterest belief scallions will not continue to regenerate indefinitely with only water and sunlight. It will work for a while but eventually the bulb of the scallions (where all the nutrients are being stored) shrivels up and then scallions become very sad and get thrown away. If however, you start scallions with sun and water and then put them in soil they really take off! There are tons of tutorials for this on Pinterest, which is where I first saw how to do this. Here is mine, hope it helps! 🙂

ImageHere’s what you’ll need:

  • plastic bottle of some kind (you could use glass but that’s a lot more complicated)
  • a utility blade (I couldn’t find one)
  • cheese cloth
  • soil
  • scallions! or whatever else you want to plant

thing you need to do is cut the bottle. Mine had a ridge that made the perfect place to cut. Like I said a utility blade would be easiest but I couldn’t find one so I got it started with a knife and a cut it the rest of the way with kitchen shears. The top of the bottle will be turned over and become the planter and the bottom of the bottle will be the water reservoir.

 step is to measure and cut the cheese cloth. Put it through the opening of the bottle and splay out the cloth inside of the top of the bottle so the water will travel up and into the soil. In the photo you can see I try to spread out the cloth so water can get to as much of the soil as possible.


add your soil! Slowly and carefully pile in your soil, tamping down as you go. Only a tiny bit of soil fell to the bottom and once the soil gets wet no more should fall through.


Fourth, planting time! Just make a hole in the soil with your finger and put your scallions in and tamp down the soil around it. Continue until your planter is full!

Fifth, water. First water from the top so any air bubbles in the soil can escape. You might want to add more soil on top after this because the soil has compressed down. Then just add water in the reservoir and set in the sun! Ta da!


These two I made about a month ago, look how well they’re doing! The roots love it so much they’ve grown all the way down into the water reservoir.


Lemon Tree!

We got a lemon tree! I’m very excited. We got a Eureka Lemon Tree (basically a normal lemon tree) which can be kept in a pot! Teehee! It can be kept either indoors or outdoors or both, AND it creates fruit ALL. YEAR. LONG. How amazing is that? I had no idea, I though fruit trees only produced fruit in the summer. Anyway! I finally planted it in a very big pot and not it’s outside getting used to the warm weather. This post is just showing how I decided to plant it.

I started with a really tall (about 30″?), black metal pot from Ikea for only like $30. Sweet. But it only came in black and considering that it’s metal and it’s going to be outside even in (Northern) Virginia’s heat I wanted to paint it a slightly less hand-burning color. Here is the pot before painting, sorry, these aren’t the greatest photos.


I used Rustoleum’s Ultra Cover Primer first. I think the color spray paint I chose actually would have covered the black but it probably have taken more than one can.


This is the pot after being primed. Looks like a cloudy hill. Or… something.


I decided green is the obvious color to choose. If I’m going to have a lemon tree in the house producing fruit in the middle of January making me think of Spring then I want a giant bright green pot damnit! I used Rustoleum with a satin finish.


One problem I encountered when I started painting the green was a weird fuzzy finish (see the next photo). I think it happened because I didn’t wait long enough between the primer and the color coats. I left it alone for about an hour and started again and it painted on smoothly.


Voila! Pretty green planter!


Also from Ikea I got a small rolling platform for the pot to sit on top of so it can be moved around easily. I also used a trick from Pinterest to help keep the weight down. In the bottom of the planter I used packing peanuts (plastic, not cornstarch) instead of rocks. It will allow the soil to drain some without adding almost any weight.


Look how pretty she is! I only put the peanuts in about 8″ up so she has TONS of room to grow. She also smells INCREDIBLE, like, honeysuckle but even more intense!

IMAG0313Just one more picture, I promise! If you look a the base of what used to be a flower you’ll see a small green ball forming, that’s a lemon! Cool right?! There are three currently forming and the nice woman at the garden center told us that these trees will have lemons, blossoms, and just plain leaves all at the same time all throughout the year. 😀


I’m Worried I May Have Killed My Basil *Updated*

This weather has really screwed me over. I planted basil, cilantro, thai basil, rosemary, and mint in the two large-ish deck pots over the past several days. Every night it has been going down below freezing, it’s April 3rd! This is insane! So to protect the plants we’ve been covering them with plastic and cardboard and bringing the ones weren’t planted/ones in smaller pots.

I only planted the the thai basil, cilantro and rosemary yesterday foolishly not checking the weather first. Well, surprise surprise the it went below freezing last night so we had to cover everything again in the evening. Now I’m not a morning person, I didn’t get up until about 11 today but I didn’t take the plastic off because I thought that maybe it would create a greenhouse effect and might be good for them. I think I made a terrible mistake. I took of all the covering at 1pm because the sun was so bright and found the basil even more wilted than it’s been and the thai basil almost dead. Everything else seems fine, surprisingly that includes the cilantro which I thought would also be delicate.

I’m really worried and also sad. It’s not like it was a lot of money we spent, about $18 for all of the basil plants, but I’m really disappointed. It’s going down below freezing AGAIN tonight and I’m worried that tomorrow I’m going to open it up and all the basil will just be dead. 😦

UPDATE: It looks like the thai basil is a goner. Annoying. The regular basil is, I think, alive, but possibly only for the moment. I trimmed off a bunch of dead tissue from the regular basil but I might have to cut back even more. The ends where I cut are quite brown so I might need to cut further down on the stems. I think this week will be a good test of the basil to see if it’s actually going to survive or just keep withering away.

Gold Accented Mirror

 Finally I have my first post and it actually has nothing to do with anything I’ve seen on Pinterest, but it’s because of everything on Pinterest that my friend (the owner of the mirror) and I had the idea to do this. Here we have a very pretty mirror (the photo doesn’t do it justice) but the color and distressing is a bit dull so it’s hard to see all of the pretty detailing in the frame.

We both thought it would benefit from from some more (it actually already has some) gold touches. Luckily I already had Rub-N-Buff paint in two different gold colors. I decided to use the “Grecian Gold” because I thought it would a little more antiqued.

Be careful with this stuff. This was my first time using this product so obviously I read the instructions, which is good because I was about to start using it inside. No, bad Angela!

A few things I learned from this was:

• It smells A LOT. Use it in a well ventilated area, I was outside and was still accidentally smelling it.
• When you first open it will be very watery/oily; because I hadn’t used it before I thought that was its normal texture and was therefore caught off guard when suddenly the gold color was much stronger I’d finally gotten down past the oil. I’d squeeze out the first bit and throw it out if I use this again.
• It shows on the cover a woman just using her finger to apply it but on the directions is says to wash your hands basically as soon as possible so that worried me. I decided to use one paper towel to apply and one paper towel to wipe off and that worked fine.

IMAG0087I think I was done in about 10 minutes and it looked really nice. Sadly the photo of the whole mirror did not really show the gold so here is a close-up shot of the final product.
